Afternoon Teas
We are afternoon tea snobs - we hate cold little sandwiches with bland fillings that were made 6 hours ago. There. I have said it. Coupled with that, as we have previously established we are perfectionists. Combine the two and you have the perfect storm to create a quite special ‘Afternoon Tea’, which along with many things keeps us awake at night thinking about everything we have to bake!
Currently we are proudly serving the Merriment Edition Afternoon Tea. When we say we make every single bit of it we mean, every single thing.
Most people start savoury - but there are no rules. The bottom layers boasts our now rather sort after Manor Sausage Roll - just try these - you will understand what we mean, many have asked for the recipe - as yet this is one we are keeping to ourselves. The sausage roll is joined by our ‘Soupette’ - Pea and Mint to be precise. This smooth, deep soup is refreshing and light whilst vibrant in colour. And then there is the chorizo and manchego biscuit topped with our own onion puree. These are what we munch on when we are burning the midnight oil - moreish with a delicate crisp bite.
Move up a layer and you will find a jar of clotted cream rice pudding topped with our raspberry and thyme jam. This is special. I could bath in this stuff I love it so much. However, next to the rice pudding we have everyone’s favourite - the one we have had to start to sell in pre ordered boxes - the Red Velvet Cake. Boasting all the luxury and glamour of velvet, this three layered cake is filled with cream and chocolate ganache.
At the top of our quirky cake stands you will find a duo of Macarons; one Matcha, the other Amarula flavour (if you are wondering how to pronounce it I recently learnt the almond meringue type is always said macaRON, as in Ron from Harry Potter!) Until this winter I had not have Amarula; but boy oh boy is it wonderful. It is a cream liqueur from South Africa, made with sugar, cream and the fruit of the African marula, which is also called the Elephant Tree. Imagine Baileys but better. Then imagine it sandwiched between two perfectly crisp macaRONS….a bit special.
Nestled next to the macrons is our lemon tart. A delicate Pate Sablee pastry (french almond pastry made in dinky little rings) a perfect vessel for our homemade lemon curd and crowned with Italian meringue browned using our latest and bestest toy…the blow torch.
