Cookie Love

When you are asked to make cookies, but it is the end of a long day and you have no energy this is our go to recipe. Seriously easy but also seriously tasty and anyone can make them. Eight year old Bethany proudly made the whole recipe with not a single interference from Mum (which made her feel like a brilliant baker and grown up!). The only problemo is that they don’t last long as they are so tasty!

The most simple, yet delicious cookies, using just four ingredients. A great one to try with little people.

Ingredients

  • 1 cup Smooth peanut butter
  • 1 cup sugar
  • 1 egg
  • 1tsp vanilla extract

Instructions

  1. Preheat the oven to 160 degrees C
  2. Line 2 baking sheets with parchment paper.
  3. In a large bowl combine all the ingredients.
  4. Scoop tablespoon balls of dough and roll into 3 cm balls.
  5. Place on prepared baking sheets, leaving 2cm between each cookie.
  6. Using a fork, press down on each cookie twice, once going up and down and once going across to create a crisscross pattern.
  7. Bake for 12 minutes, until golden.
  8. Leave cookies on trays for 10 minutes to firm up.
  9. Cookies will keep in an airtight container for 1 week (but they never last that long in our house!)
